The nearest I’ve come to answering these questions has been eating at Foul Witch, a five-month-old Italian restaurant in the East Village owned by two of the founders of Roberta’s and Blanca. Roberta’s is, of course, the Bushwick restaurant known for its artfully charred pizza, its Tiki Disco parties and the radio station that broadcasts programming about food from its backyard. Blanca is a 12-seat bunker in the same backyard that has been closed since the early days of the pandemic. Agnolotti would burst with molten taleggio turned green-black by powdered phytoplankton that tasted like the bottom of the ocean. Dry-aged duck breast would be grilled slowly over Japanese charcoal and served with beet mole, as earthy and smoky as an underground fire.

The work is part time, and I charge $30 an hour for the first two sessions and $40 after that for services a mom may provide. I've helped reformat a résumé, taught a guy how to iron his shirt before a big job interview, and shared recipes for chicken soup. While I'm certainly open to local in-person sessions, I don't do any marketing, so most people aren't aware I'm even here. Unlicensed businesses are "taking a pretty hefty percent of the potential market share," according to Amanda Reiman, a researcher at cannabis intelligence company New Frontier Data. The problem is particularly cumbersome in New York City, Knowles said. Besides cease-and-desist letters, New York City has begun cracking down in other ways, too. "We will not let the economic opportunities that legal cannabis offers be taken for a ride by unlicensed establishments," the mayor said at a news conference.
